Salmon in herbs (Tasty and quick!!)

Ingredients
  • 3 salmon filets
  • 3 tbs. olive oil,
  • 2 tbs. of lemon juice,
  • 2 tbs. of wine vinegar,
  • 1 chopped garlic clove,
  • 2 tbs of oregano
  • 3 tbs of parsley
  • salt and pepper

Mix all the ingredients and create a paste. Spread the paste on the fish and leave for at least an hour sitting (much better over night). Preheat a griddle. Cook for around 10 mins per side.

'Flan' Cake (as told by granma!) [Be patient with translation]

Ingredients:
For Flan
  • 1 can of lechera
  • 1 can of condensed milk
  • 1 Philadelphia cream cheese
  • 1 tbs vanilla
  • 4 Eggs

For Cake

  • Ready to make cake mix
  • 5 eggs + 2 yolks
  • 1 bar of butter (90 grms)
  • 1 cup of condensed milk
  • 1 teaspoon baking powder

Additionally

  • Cajeta (milk candy) to cover the baking pan

Preparation

Cajeta needs to be put in microwave or steam bath so it gets more liquid. The baking pan needs to be covered with a thick layer of it.

Cake.- Place the butter in the mixer and mix untill creammy, add eggs, and then yolks then milk and flour mixed with baking powder.

Flan.- Blend all ingredients for flan and pour in baking pan precovered with Cajeta.

Add the cake mix to the pan (doesn't matter it might look like they mix). Place in the oven in a steam bath for an hour (water should be hot and cover 1/3 of the pan that has the flan) at 175oC.

Use a knife to separate from pan while hot. Place a plate on top of the pan and turn.

Optionally use chopped walnuts and cherries.

A weird version of 'zarandeado' fish (very fast cooking time)

Ingredients:

  • Fish filets (I like salmon but flounder or tilapia can be used easily)
  • Mayonaise (Lemon added)
  • Onions
  • Tomato
  • Valentina or Tabasco sauce (if Tabasco, add lemon juice)
  • Salt and Pepper
  • Aluminum foil

To Prepare

Place a piece of aluminum foil. Spread Mayo on the fish, add salt and pepper. On the foil, place sliced tomato, onion, put the fish on top of this, add the sauce, top it with onion and tomato.

Close the foil to form a small envelope around this, and seal it. Place and preheat a griddle, and place the foil envelope on top. Cook for aprox 10 mins per side.

Goes great with steamed veggies and rice
