A weird version of 'zarandeado' fish (very fast cooking time)

Ingredients:

  • Fish filets (I like salmon but flounder or tilapia can be used easily)
  • Mayonaise (Lemon added)
  • Onions
  • Tomato
  • Valentina or Tabasco sauce (if Tabasco, add lemon juice)
  • Salt and Pepper
  • Aluminum foil

To Prepare

Place a piece of aluminum foil. Spread Mayo on the fish, add salt and pepper. On the foil, place sliced tomato, onion, put the fish on top of this, add the sauce, top it with onion and tomato.

Close the foil to form a small envelope around this, and seal it. Place and preheat a griddle, and place the foil envelope on top. Cook for aprox 10 mins per side.

Goes great with steamed veggies and rice
